3 Things: A Thought, A Word & A Recipe

It's quiet in the house right now. Josh isn't home yet and Mr. Darcy is patiently waiting near the front door for when he gets home. I'm not sure who misses him more when he is gone, but thankfully I have first dibs when he walks through the door. ;-)


I finally decided on my word this year: CHERISH. Instead of thinking that life is passing me by I want to embrace the mundane little moments. To see the waiting period as time to draw closer to Him. A time to cherish every aspect of life that He chooses to give me.


You another thing about winter? I crave comfort foods. Chili, Mac & Cheese, Black Bean Soup...I could make soup 7 days a week and that would make me happy!!!! haha Plus, a new love in the comfort food department has been White Chicken Chili! Would you believe this was the first year I'd ever tried it? We both loved it. I may be making it today, too.  : D


It's also the world's easiest recipe!Plus, it's pretty healthy GF/WF, etc.

White Chicken Chili
2 Cups Great Northern Beans (cook according to package)
1 Cup shredded chicken
1 small can of diced chili peppers
1 can of diced tomatoes or Rotel
1 1/2 teaspoons garlic powder
1 1/2 teaspoons of seasoned salt
Cracked Salt & Pepper to taste

In a large crock pot combine all ingredients and let cook for 4-6 hours. Top with sour cream & cheese. Enjoy!

It's totally natural to crave comfort foods in the winter. Our bodies are designed to put on extra weight to keep us insulated from the cold. Wouldn't it be great if we all understood that and could just gain ten pounds happily each fall and shed it again in the spring, just because it's the nature of things?

Your word seems to be very similar to mine in meaning. Mine is see. I want to slow down enough to see all the things I miss when I rush. I want to be present in my own life more. I want to see moments. And I wand to see as God sees. I've already had a few experiences with it. It's been very powerful.

I wish you many wonders as you spend this year exploring your word.

I also get this craving for comfort food during winter. I`m not the biggest fan of traditional Norwegian food, but during winter it tastes wonderful!
