With fall here, I'm pushing myself to learn more "soup" recipes. I LOVE making soup. It's perfect comfort food in my opinion. I really want to branch out and try different recipes. The one I'm sharing today, taste like pizza in a bowl. The best part? It's much lower in calories and much healthier than any pizza on a crust! Win, win, right?
Pizza In A Bowl
16 ounces white beans (a.k.a Great Northern Beans)
16 ounces stewed tomatoes in sauce
1 to 2 Cups of Diced Zucchini
1 Cup of Diced Carrots
1/2 cup sliced black olives
8 ounces tomato sauce
16 ounces chicken broth
1 tsp Creole seasoning
1 tsp Italian seasoning
1 T. Olive Oil
Salt & Pepper (to taste)
2-3 Tablespoons Mozzerella Cheese (for topping)
In a large pan, saute zucchini & carrots in olive oil until tender. Add stewed tomatoes, tomato sauce, black olives and seasoning. Slowly add broth and simmer for 20-30 minutes. Top with Mozzarella or Jack Cheese. Enjoy!
