Just Call Me Cookie Monster


One of my favorite childhood memories was drinking chocolate milk out of my Cookie Monster cup at Grandma's house.  I'm pretty sure it had something to do with my obsession with morning cartoons which included Sesame Street (what can I say? I'm a child of 80's). Who couldn't watch that show and not yearn for cookies? I'm pretty sure I still can't.


And thanks to the wonderful world of Pinterest, I've been introduced to all kinds of creative recipes. My latest escapades in the kitchen we inspired by a series of flourless Peanut Butter Cookies. Now, I love me some peanut butter....but almost always it NEEDS to be followed by some chocolate. NEEDS. So I added chocolate chips, rolled the cookies in sugar and sprinkled sea salt on top. Josh liked them. I loved them. They'll be a keeper in the Cookie Monster department for sure! Another benefit was getting to practice foodie photography! *wink*


The texture inside was chewy and crunchy around the edges. The peanut butter flavor is for hard core PB lovers only. Just in case you wanna try these cookies out for yourself, here's the recipe I used (originally from the Gluten Free Baking web site):

Flourless Peanut Butter Chocolate Chip Cookies: 

1 Cup Peanut Butter
1/2 cup chocolate chips
3/4 Cup Sugar
1 Egg
1 teaspoon baking soda
1/4 teaspoon salt

Coating:
2 teaspoons sugar
1/4 teaspoon sea salt

Mix together until a solid dough forms. Then roll by the tablespoon full in the coating mixture. Flatten then make patterns with a fork. Bake on a stone ware pan at 350 for 8-10 minutes.

Those look so good! I haven't had a cookie in about 3-4 months, and I've been okay with that until this post! Haha...I feel like cheating now ;-) At least they're flourless, which is awesome!
