Easy Cheesy Beef & Potatoes Recipe



Yesterday, was a killer in the heat wave department. It was over 105° at our house!

Needless to say cooking over the stove for lengths of time was not my idea of fun. The crock pot was my saving grace.

I ended up making a Cheesy Beef & Potatoes Casserole in the crock pot. I was a bit skeptical, but it turned out great! Josh had seconds, so that always a good sign. ;-) While it was cooking it was pretty watery, so I was worried about that. But after it cooked for several hours, the mixture thickened. I also think it would be great served on top of homemade biscuits or with corn bread. Plus, it was great for my nutritional goals: no wheat & low calorie. 

Here's the recipe:

Easy Cheesy Beef & Potatoes

1 tablespoon of olive oil
1/2 lb. Lean Beef Tips
3 Red Potatoes, diced
1/2 cup red peppers, diced
1/2 cup onions, diced
1 garlic clove, minced
1/2 cup Colby jack cheese, shredded
1/4 teaspoon creole seasoning
1/4 teaspoon garlic salt
1/4 teaspoon onion powder

 In a saucepan sear beef tips until brown. Add meat, veggies and seasoning to crock pot. Mix well and add cheese. Cook on high for 4 to 5 hours or until potatoes are soft. Makes 4 servings at 312 calories per serving. Enjoy!
