
Well, a couple of posts back, I had mentioned making Double Chocolate Chip Peanut Butter Cookies. They were such a hit at our house with myself and the hubby...I decided to make a batch for my brother when he came for a visit this past weekend. Great excuse, heh? Hey, a girl has to do what a girl has to do, I say.
Besides, baking over the weekend, I found myself wrapped up a variety of books. I finished Sunrise by Karen Kingsbury, Take One by Karen Kingsbury, made progess on the Perfect Wife, and devoured more of Great Expectations by Charles Dickens. Happiness! I told you I was a bookworm...
But, I digress, on to the recipe.
Double Chocolate Chip Peanut Butter Cookies!
2 1/2 -
2 3/4 Cup of Flour2 Eggs
1 teaspoon baking soda
1 teaspoon salt
1 Cup of Butter (softened)
1 Cup of granulated Sugar
3/4 Cup Brown Sugar
4 tablespoons of Baking Cocoa
1 teaspoon of vanilla
1/2 Cup Cup of Chocolate Chips
3-4 Tablespoons of Peanut Butter**
In a small bowl, combine dry ingredients and mix well. In a larger bowl, combine butter eggs, and vanilla; Slowly and peanut butter by tablespoons until well blended. Mix well until batter becomes firm and sticky. Add chocolate Chips. Bake at 350 for 7-9 minutes, or until the center of the cookie is firm.
Note: I like to chill my cookie batter for roughly half an hour for best results. :)
**On my first batch I had less peanut butter. The next batch, I added more. In fact, I'm sure you could get away with even more peanut butter. :D Can you tell I like the stuff? Give your chocolate & PB and nobody gets hurt...

Oh YUM! Those look amazing! I just made a batch of plain ol chocolate chip last night and they turned out the BEST ever! I think it has something to do w/my new Kitchen Aid mixer ;-)

Scrumptious! These looked so delish I had to go into the kitchen and get something chocolaty - my fat free Jello chocolate pudding did not satisy me as it should have.
I chill my dough, too. Makes it easier to handle, and the cookies seem to hold their form better.
Reading? As in, books? Hah - I never have time for books anymore - I'm hooked on blogging!
