June Cleaver, please!

I must admit. I think I get some sort of high off of surprising the dear fiance. I mean, I always wanted to be June Cleaver or Lucille Ball. Dressed up in those adorable dresses, having a complete meal whipped up and perfect on the table for when he walks in the door. Of course, we aren't at that stage yet (but we will be in just 23 days!).

So last night, I decided to leave work a few minutes early to run by the grocery store. I found two new recipes on-line, and I picked a sure hit for dessert. Then I packed our lovely little meal into a picnic basket; then proceeded to pull the June Cleaver. Cute outfit, did my hair and even managed to have my make-up done for when Josh got to town.

I am happy to announce, it was a success! Well, I mean I got everything done before he came to pick me up. So here was the menu:

  • Chilled Advacado Soup-I found it browsing on-line. I found it to be in the lacking department. I think I'll keep looking for a good chilled soup recipe...
  • Ham and Swiss Cheese Roll ups. The other recipe I Found, I tweaked it to better suit our tastebuds, and they were pretty darn good. A bit on the rich side, but hey, that's what swiss cheese is all about, right?
  • Banana Chocolate Chip Muffins for dessert! I think this was his favorite part, and mine too! I just Loooooove these and they are SO simple! So simple in fact, that I'll share the recipe.

Banana Chocolate Chip Muffins
I created this recipe to try and recreate the taste of the Banana Chocolate Chip Bread from Starbucks!

1 pkg of Marth White Banana Nut Muffins Mix
1/2 Cup of Half and Half
1 Tablespoon of Brown Sugar
2 Tablespoons of butter (melted)
1/2 Cup dark chocolate Chips

Stir muffin mix and half and half until well blended. In a separate bowl, mix melted butter and brown sugar. Add to muffin batter. Mix in chocolate chips. Cook according to muffin mix direction. Voila!

I have always wanted to be just like June Cleaver, too! Unfortunately, when we got married I realized that I'm not quite there yet...or even close. lol...but I teach, so this summer when I'm off for 12 weeks, I plan on being a lot more June Cleaverish :-)

I have also wanted to play the roll of domestic housewife, but once I got a taste of it I think I would rather have a full time job and he be the househusband. LOL

That bannana chocolate chip muffin recipe looks really easy and I'll bet it's delicious. Much as I want to sometimes try to be a domestic goddess, being a busy grad student more often than not interferes. It also doesn't help we have a tiny kitchen in our apartment. Usually my fiance is the one who takes on the domestic kitchen role.
